If Ginger is unpeeled and then dried, it is known as brown Ginger and if Ginger is peeled and dried, then it is called white Ginger. Dry Ginger is obtained by drying fresh Ginger under sunlight. Initially the fresh Ginger rhizomes are harvested, washed and then outer peel is carefully removed with the help of peeler. They are Sun dried for about two weeks, then they are washed again and dried under sun light for about a week thus dry Ginger is obtained.
